Super Easy Baked Mac-n-Cheese.

Hey, everyone!  Today I'm sharing a quick recipe that is a solid go-to when we are in the mood for some rich and cheesy comfort food.  It's my Baked Mac-N-Cheese and oh yummmm....we love it around here!!  

This the perfect dish when I need to bring something to a potluck or BBQ (like the baseball party I took it to this past weekend).  It's also a staple at our Thanksgiving dinners.

This is a recipe that has evolved over the years.  I've tried several baked mac-n-cheese recipes from Pinterest and some involved constant whisking for 5 minutes or so which I just don't have the patience for and some just never gave me the flavor or texture I wanted or I didn't like the pasta they recommended. There was just never a perfect recipe.  So I took pieces from a few different ones and made this one.  

I love it with the Rigatoni because it allows all that cheesy goodness to seep into the center of the tubes.  You can use any pasta though and I'm sure it would be good.  I just prefer Rigatoni with this recipe.

I'm giving you the recipe I use the majority of the time because I'm usually making it to share at a party or holiday dinner.  You can easily half the recipe to make it for just your family.  It heats up nicely though for leftovers so it's not a bad thing if you make too much! ;)

Baked Mac-N-Cheese


INGREDIENTS:

16oz uncooked Rigatoni pasta
16oz Sour Cream
1 stick melted butter
2 eggs, beaten
2/3 cup evaporated milk
1 teaspoon salt
6 cups shredded cheddar cheese
1/2 teaspoon garlic salt

DIRECTIONS:

Set oven to 350.

In a large pot, cook pasta according to the package instructions.  Drain and set aside.


In a large bowl, whisk together the sour cream, eggs, milk, butter, and salt until smooth.  


Pour over pasta (or add pasta to mixture) and add 4 cups (or large handfuls) of shredded cheese.  Stir everything together until well combined and pasta is fully coated.


Pour mixture into a 9x13 baking dish.  Add remaining cheese evenly over the top (more cheese is always better!) and then sprinkle on your garlic salt.  


Bake uncovered on center rack at 350 for 35-40 minutes or until the cheese is golden and bubbly.

(Can you believe I totally forgot to snap a pic of the final product out of the oven?!  Kicking myself!!!  But I did get one on a plate.)


Carefully remove from oven and enjoy!!

*A couple of things.  If you don't have exactly 16oz of sour cream, just use what you have.  I've used less (maybe 3/4 of a 16oz container).  And sometimes I use just a half stick of melted butter.  So don't panic if you don't have the exact amount.  You may also make it the first time and decide you prefer it with less sour cream, less butter, more cheese etc.  Make it your own!

  4. Baked mac n cheese is MY FAVORITE! My brother in law's friend makes a killer one too and I think it's pretty similar (with shells and another cheese added in), but I'm all about the easy dishes too! Will have to give this a try.
