Recipe Club. {Healthy Stuffed Peppers}

So I've been on this healthy eating and working out kick for the past 10 days and I found this yummy little recipe on Pinterest!  I made it for dinner Monday night and while I HATE to cook, there really wasn't much cooking involved.  The prep was a little tedious but at least I wasn't slaving over a stove or having to handle lots of gooey, slimy raw meat.  (I hate that.)

I don't take pretty food pics so just be prepared.  Definitely have no future career as a food blogger.  I also forgot to take a group shot of all my ingredients before we started.  Whoops.

So here's what you'll need:

6 slices cooked turkey bacon, crumbled or chopped
3/4 cup part skim Ricotta cheese
1/3 cup shredded parmesan cheese (grated works too)
1/2 cup chopped spinach
24ct 2-3" sweet baby peppers (I got them in a bag from Walmart)




Directions:

Preheat oven to 350 degrees.  Spray baking pan with cooking spray.  Set aside.

In a bowl, combine ricotta cheese, parmesan cheese, spinach and bacon until well mixed.  Add salt and pepper to taste.  Set aside.



Now comes the tedious part.  Wash peppers and cut 1/2 inch from the top and clean out seeds. 


 Use a spoon to lightly stuff each pepper with the mixture.  If you have mixture leftovers, find a way to add it to the peppers! Don't waste it! That's the good stuff!



Bake for 15-18 minutes until the mixture is hot and the peppers soften.

Remove and let cool for a few minutes.  Then enjoy!!




The hubs and I loved these and they almost make you feel like you're eating something bad.   They even heated up easily in the microwave as leftovers for lunch.

 Of course, if these were jalepenos, were deep fried, stuffed with cheddar cheese and wrapped in bacon, I'd be ok with that too.  But my thighs would not.  ;)  So we'll stick to these for awhile.

  3. Those look awesome! You mentioned doing the 21 Day Fix plan (which I am also pushing myself through lol), do you know the container count and serving for these? Always looking for yummy options!

    1. The website where I first saw the recipe didn't break it down but someone in the comments section did. They said the entire batch is 2.5 red, 2.5 green and 1.5 blue. And then they said if you eat 4 peppers it is approximately .5 red, .5 green and .25 blue. I haven't checked all of that out yet...just trusted her. ;)
