WHAT'S UP WEDNESDAY | 4.25.18

Happy Wednesday, friends!  

It's the monthly What's Up Wednesday post where I link up with Mel, Sheaffer, and Shay and discuss what all we've been up to lately!


We've been busy this month with baseball in full swing, Craig off to football camps every weekend, a little getaway, and Teacher Appreciation/Graduation/Mother's Day season hitting my Etsy shop!

But today we're going to answer these specific questions:

Let's get started!
WHAT WE'RE EATING...

Ummm...whatever is quickest??  ;)

Basically, the same go-to meals.  Tacos, spaghetti, random chicken dishes, salads and last night I had to get creative and just threw a few ingredients (I use this term loosely) together to make a sausage fettucini.

Do you ever have those nights where you go to grab the stuff to make (insert meal idea here) and you realize you're one main ingredient short?  Last night that happened with 3 different, very basic meal ideas.  I wasn't very focused during my online grocery shopping this weekend and missed some key items so I'm having to improvise.

I ended up slicing some turkey sausage, browning it with some minced garlic and EVOO, boiling some bow tie pasta and heating up some jarred alfredo sauce.  Mix it all together and wah-la!  It was actually really good by the way.  I'll never be the mom who makes sauce from scratch and I don't even pretend to care.  I figure Emeril's jarred sauce is better than my made-from-scratch sauce any day.  ;)

WHAT I'M REMINISCING ABOUT...

Mason and Craig had birthdays last weekend (you can read about our weekend HERE) and of course I get all nostalgic.  Look at my boys!


WHAT I'M LOVING...

I've been a little obsessed with Jane.com and Zulily this month. I try to stay away from these because it's so easy to get sucked in but the deals are just SO GOOD.

Jane is my new go-to for cute tees!  I found more than I could even look through this week and they are all SO CUTE!


Deals go QUICK, y'all! By the time you read this, this one will be gone but there are so many more just as cute.

It slow cooks, steams, boils, browns, makes yogurt (people make their own yogurt?) and is also a rice cooker.  We've had our slow cooker for about 15 years.  It is cracked.  It is ugly.  But it still works.  But Mama wants to upgrade!



WHAT WE'VE BEEN UP TO...

In case you missed it, Craig and I hopped on a plane to Phoenix this month and enjoyed some much-needed R&R.

And the rest of our month has been a whole lotta baseball.




These boys are on a hot streak and I may groan every time we have an 8am game on a Saturday morning or have to play when the winds are practically hurricane force but I know these days are fleeting.  And someday, way too soon, I know I'll be crying into my pillow and vowing I'd give anything to be back in this place.


And now I'm crying again.

WHAT I'M WORKING ON...

Oh, just #allthethings.

And my little "life" signs.  This customer wanted Chiro Life for a friend but I can do mom life, army life, wife life, teacher life...basically anything. :)

WHAT I'M EXCITED ABOUT...

We just started planning our very first DISNEY VACAY!  We aren't going until Thanksgiving but my sweet friends over at the Mix and Match Travel Agency booked us this week and are guiding my completely clueless self through all of this.  There is so much stuff to do, see, schedule and organize that it's overwhelming.


I can't wait!!

WHAT I'M WATCHING/READING...

First of all, I gushed about my love for my new Kindle a few times this month.  I was able to read an early copy of Emily Giffin's new book, All We Ever Wanted.  It was SO GOOD!!


And I'm currently reading an early copy of Mary Kay Andrew's, The High Tide Club.  I started it today while waiting for Matthew finish up practice.  I'm maybe a chapter in and I'm already hooked!  I mean, it starts with a bunch of teenage girls burying a dead man in the sand so yeah...hooked.

As for what I'm watching, the highlight of my week (TV-wise...and possibly overall depending on the week, if I'm being totally honest) is The Real Housewives of NYC.  I can't get enough.  I love those wacky women and live for their soundbites.

I'm also the biggest Southern Charm fan.  I've been watching since Day 1 and I just want to be friends with them.  Mainly Cam.  And maybe I shouldn't admit this, but earlier this month I started watching The Real World San Diego on dailymotion.com because Cameran was on that season.  And y'all.  She looked exactly the same as she does now way back then.  It's a little freaky.  I'll admit I'm a little jealous.  And did you know her other housemate, Jamie Chung, went on to be a real Hollywood actress?  #funfact

  4. Okay, I need to discuss the Giffin book with you! I'm glad you loved it. From reading the synopsis, I couldn't tell if I'd like it or not.

    1. It's definitely a little more serious than a lot of her other books but it pulls you in!! And the whole story is just something that can (and does) happen so easily this day and age with teens and social media. And how one bad decision can destroy lives. It will give you all the feels!

  5. What a great month! That's so exciting about your upcoming vacation! We definitely have throw together dinner nights. Last night, soccer practice ran really late, so my husband and I were frantically whipping up tacos for the whole family at 8:30 at night. There's no extra time these days!

  6. Amanda, you are my NEW BEST FRIEND! I have ALWAYS been a "book girl" and in March became a fan of the Kindle! I couldn't imagine that I would like audiobooks because I literally LOVE to read the words on the page so much! But I took your advice and started Girl, Wash Your Face on audiobooks this week. I AM OBSESSED! I actually had one earpiece in during our Tuesday night baseball game so I could watch Cutter play and LISTEN to my book at the same time! #addicted Can't wait to read/listen to more of your recommendations!   7. Your boys must play travel ball if they’re playing all over and out of town. I know the love/hate of travel ball! We have a daughter that plays travel volleyball, 2 boys playing travel baseball, and another daughter that plays tennis. It so crazy, but I agree that bit about “...no one left to take to practice”...gets me everytime! I don’t know what I’ll do with myself when they’re all grown up!?

    1. We haven’t started full-blown travel ball yet. Mason is on a “tournament team” where they play in 3 tournaments this season but all are local. (Yay!) And Matthew is just on a regular rec team. This is the Collin County tournament so it includes teams from neighboring cities (the kind where you walk across the street and are in another city) and we are having to use their fields some too. Our longest drive should be less than 30 minutes, thank goodness! I know all the travel madness is in our future though!! I’m scared!! Haha
