SWEET & SAVORY BROCCOLI SALAD | KETO-FRIENDLY!

I've got a quick little recipe today for all you low-carb and Keto fans!


I've always loved Broccoli salad.  It's sweet and savory all mixed together with a little bit of crunch.  Plus, I feel like I'm getting in some solid nutrition with the broccoli even if it is surrounded by all that other stuff that's not considered "healthy".  (Unless you're Keto and then you need the fat.)

This stuff has all sorts oeto menu.  However, I was on Pinterest the other day, just pinning away and saw that you can EASILY make this Keto-friendly!  And after I saw how you do it, I was like DUH, AMANDA!!
f great keto-friendly goodness in it like broccoli, bacon, cheese, and diced onion.  But regular broccoli salad is made with a sugary dressing that is #AMAZING but sugar definitely takes it off the K
Now the real broccoli salad calls for sunflower seeds and cranberries but since we're going low carb here, I omitted them along with the sugar.  (You could totally add in the sunflower seeds though.  I just forgot to grab them at the store and honestly didn't even miss them.)

Instead of the sugar, I just subbed in my favorite Keto sweetener and replaced the mayo with a more keto-friendly option.  (Although since I'm not super strict keto, I feel like any real mayo would work fine.)  I changed this recipe up a tad from the one I found on Pinterest but it's basically the same.

TIPS & TIME SAVERS:
*You can make this even easier by buying the bags of pre-cut broccoli florets.
*Use thicker cut shredded cheese, not the fine stuff.  Or you can also dice it up into cubes.
*Shred it yourself to save a few extra carbs.  Packaged shredded cheese contains a starchy coating to keep it from clumping.
*Use "real bacon" pieces but NOT the fake bacon "bits". Or buy the precooked bacon slices, pop them in the microwave for a minute until they are crispy and then crunch them up. (my personal preference)
*Use an olive oil mayo that doesn't contain any sugar.  We like this one. (Just showing you what it looks like but you can get it almost anywhere.)
*My favorite sweeteners are THIS ONE (also comes in a powdered sugar) and THIS ONE.


Ok, enough of the boring stuff.  Here's the recipe.

INGREDIENTS:
5-6 cups of broccoli florets (or about 2.5 heads of broccoli chopped into bite-size pieces)
1/2 lb of well-cooked bacon, chopped
1/3 cup diced red onion
1 cup shredded cheddar cheese

DRESSING:
1 cup mayo
3 tablespoons erythritol (the sweetener)
2 tbsp apple cider vinegar

INSTRUCTIONS:
Start with the dressing.  Combine mayo, erythritol and apple cider vinegar in a small bowl and mix well until combined.  Set aside.
Add your bite-sized broccoli florets, bacon, onion, and cheddar cheese to a medium-sized bowl.  And pour on that dressing!  Stir it all around until it's coated nicely.  And that's it!

*Now I must tell you that this is one of those dishes that is so much better after it sits in the fridge for several hours.  So even though it may be hard to wait, it's even better if you do.

I ate all of this in about 2 days, y'all.  Haha.  It was so good.  I need more NOW.

I don't have the macro breakdown for you.  It'll depend on your cheese, the type of bacon you use, your portion size, etc.  I'm at my goal weight so I've stopped tracking for right now so I didn't figure it all up.  (So sorry!)  But as far as carbs go, it's super low.  Remember, we're only counting net carbs!  Total carbs minus fiber and sugar alcohols/erythritol.  It should be somewhere around 2 net carbs per serving but again, that's depending on how many servings you break this down into.
